Madagaskar is an exceptional place where you can enjoy excellent kebabs with a modern twist. The foundation of Turkish cuisine has long been lamb, replacing pork forbidden by Islam. However, in Europe, various poultry, veal, or beef mixtures can also be found due to the specific taste of this meat.

Kebab is a native Turkish dish with many variations and even more ways of serving. In Polish cuisine, we usually encounter döner kebab, which means 'rotating roasted meat' in Turkish. Sometimes, we also come across the term dürüm döner, which is nothing but wrapped döner.

However, a special kebab equipment in the form of a vertical grill was initiated at the end of the 19th century by a chef from the Turkish town of Bursa - Iskander Usta. The grill was filled with hot coals with a sword inserted in the middle, on which slices of lamb were skewered, preventing the fat from dripping onto the coals and causing the meat to burn. Kebab meat met with great approval in Turkey and is still a Turkish national dish today, appreciated for its oriental nature and taste qualities by many people worldwide.
